Soba Noodles with Garlic and Ginger
Quick and Easy Version

4 Bunches of Baby Bok Choy, greens rough cut, steams cut to match sticks
Half Onion, sliced
4 Garlic Cloves, minced
1 inch knob of Ginger, minced
1 Jalapeno, minced 
3 Shitake Mushrooms, sliced
1 Carrot, shredded
1 Tablespoon Miso Paste
1/3 Cup Sake
2 teaspoons Vegetable Bullion 
2 Teaspoons Soy Sauce
8 oz. Firm Tofu, cubed
4 oz. Soba Noodles
1 Tablespoon Sesame Oil
6 cups Water
1 Scallion, chopped for garnish

Lightly coat bottom of soup pot with sesame oil.  Add sliced onions to pan over medium heat allow onions to start to sweat.  Add garlic, ginger, and peppers and cook for approximately two minutes.  Add mushrooms and stir for 5 minutes.  Add carrots and continue to cook until liquid is evaporated.  Add sake to deglaze pot.  Add water, miso paste, and bullion and cook until reaching a boil.  Add bok choy stems, soba noodles and cubed tofu.  Follow cooking time for soba noodles.  2 minutes before noodles are done, add soy sauce and bok choy leaves.  Continue cooking until noodles are tender.  Ladle into a bowl and garnish with scallions.
