Bunch of Swiss Chard, greens rough cut, steams cut to match sticks
One Large Onion, sliced
Artichoke Hearts packed in oil, 8 oz.
3 Garlic Cloves, minced
Medium Eggplant, cut into 1/4" rounds or crusty bread
Brush Eggplant with olive oil and season to taste with salt, pepper, onion powder, garlic powder. Air fry or broil on each side for 5 minutes until golden brown. If using bread, follow same instruction.
Lightly coat frying pan with coconut oil. Add sliced onions to pan over medium heat allow onions to start to sweat. Add Swiss Chard stems and cook for approximately two minutes. Add greens and minced garlic. Allow the greens to wilt, approximately 1 minute. Add artichoke hearts with the olive oil from jar. Bring to simmer and cook until liquid is evaporated, approximately 5 minutes. Season with salt and pepper to taste. Spoon next to eggplant or crusty bread.
