Stuffed Potato
Quick and Easy Version

Ingredients:
Potato
Vegetables - any kind, peppers & onions shown
Cashew Cream - Herb Cashew Cream shown


Directions:
Rinse and dry potato
Lightly coat potato with coconut oil
Bake for 45-60 minutes, potato will develop a crispy skin and soft interior - the highlight of this dish!!
Slice and saute vegetables
Cut potato into bite sized piece, cover with cashew cream and vegetables.  Season with salt and pepper.
