Organic

Whenever possible, we source fresh fruits, vegetables, and herbs directly from local farmers’ markets throughout the year, building relationships with the people who grow and harvest the ingredients we love.
Raw
For centuries, cultures around the world have celebrated the vitality of raw foods. At Nüssli 118º, we draw inspiration from Dr. Maximilian Bircher-Brenner, the pioneering Swiss physician who championed raw nutrition as a path to health and healing. Our snacks and treats are handcrafted from raw or minimally processed ingredients, gently dehydrated at 118ºF to preserve their heat-sensitive enzymes and nutrients. This slow, deliberate process creates the pure flavors and satisfying textures that define every Nüssli 118º creation.
Sprouted
We sprout all of our nuts and seeds in small batches to unlock their full nutritional potential. Sprouting—or “activating”—involves soaking nuts and seeds in water to reduce naturally occurring phytic acids, tannins, and enzyme inhibitors. The result is a more digestible, nutrient-rich ingredient with a subtle, naturally sweet flavor and delicate crunch.
At Nüssli 118º, we take the process a step further: after sprouting, we gently dehydrate our nuts and seeds at 118ºF to maintain their enzymes and create the perfect texture. We even produce our own sprouted nut flours using a method that prevents heat exposure, ensuring each ingredient remains as wholesome as nature intended.
