Ingredients:
Crust:
1 cup Quinoa
1 cup hot water
1/4 cup hot water for blending
Pinch salt
Toppings: this is a suggested list, feel free to include your favorites
Cherry tomatoes
Sliced olives
5 oz. choice of cheese
5 tablespoons pesto
1 tablespoon pinenuts
Arugula
Instructions:
Let quinoa soak in 1 cup hot water for 15 minutes.
Pre-heat oven to 350 degrees.
Line baking tray with parchment paper.
Prepare toppings.
Blend quinoa with additional 1/4 cup hot water with salt.
Spread the mixture on a parchment lined baking tray. Arrange your choice of veggies and cheese atop quinoa crust.
Bake for 20-25 minutes until slightly golden brown.
