Spicy Thai Peanut Noodles


This recipe is so easy, flexible, and delicious, you won't believe how everyone will be wondering what secret sauce is making it so special.  It can be our secret!!

Spicy Thai Peanut Sauce
Juice of 1-2 limes
1 tablespoon hot sauce
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon soy sauce
1/4 cup water
1/4 cup non-dairy milk
1/2 cup peanut butter

Thai Noodles
2 cups Konjac Noodles or Kelp Noodles or Spiral Daikon, soak in water and a splash of lemon juice.  Follow instructions on package as given.
1/4 cup diced red peppar
1/4 cup chopped snap peas
1/4 cup edamame
1/4 cup shredded radichio
1/4 cup shredded red cabbage
1/4 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped green onion
1/4 cup peanuts
Add a protein source of your choice as desired.


Whisk all spicy thai peanut sauce together and set aside.  Place 1 cup noodles of choice into a bowl.  Place vegetable atop the noodles.  Drizzle spicy Thai peanut sauce generously over noodles and vegetables.  Serve and enjoy!!

Note: mix and match vegetable as you prefer.
