Our almonds are raw, organic and imported from Italy and Spain. Although we like to source our ingredients locally at Nüssli118°, most US-grown almonds are steam pasteurized and then labeled “raw” anyway - even though pasteurization reaches temperatures well above 118°F, destroying heat–sensitive enzymes and vitamins. By choosing European almonds, we know that we’re getting a truly raw product that we can soak and sprout ourselves in small batches.
