We soak our raw, organic walnuts in small batches to reduce their naturally occurring phytic acids, tannins and enzyme inhibitors. Then we take these newly “activated” nuts and dehydrate them at 118°F which results in a crispy, nutrient dense snack with absolutely nothing else added.
Walnuts are a great source of omega 3 fatty acids. A healthy diet should include a ratio of approximately 1:1 omega 6 fatty acids to omega 3 fatty acids. But in the standard American diet, due to over processed foods that contain high levels of omega 6 fatty acids, that ratio is as high as 17:1!
